Since Meatless Monday is a huge thing now, I’ve decided to throw my hat into the ring and make a Vegetarian Spaghetti! It is packed with hearty vegetables and a nice sauce so you don’t even miss the meat at all!

Ingredients
- 1 5 oz. bag Baby Spinach
- 2 Green Bell Peppers (diced)
- 1 medium Onion (diced)
- 1 10 oz. pkg. Sliced Mushrooms (rinsed and dried)
- 1 clove garlic (minced)
- 1 6 oz. can Tomato Paste
- 1 28 oz. can Diced Tomatoes
- 1 8 oz. can Tomato Sauce
- Seasonings
- 1/4 cup olive oil
- 1 1/2 tsp. salt (Add more to taste)
- 1 tsp. Black Pepper
- 2 Tbsp. chopped fresh parsley
- 1/2 tsp Red Pepper Flakes
Instructions
- In a large pot, add olive oil, onions and peppers. Cook for about 3 minutes, or until they just start to sweat. Add the garlic and cook for an additional minute. Next, add the mushrooms and cook until tender. Stir in the spinach and parsley until both are cooked down and fully incorporated into the vegetable mixture.
- Add the tomato sauce, diced tomatoes, tomato paste, salt, pepper, and red pepper flakes, adding more salt and pepper if needed. Stir and cover pot, cooking on low for about 40 minutes, stirring occasionally. Serve with your favorite pasta.

This is such a healthy and fun version of vegetarian spaghetti, I will be making it soon!
I wish I had seen this when I did my meatless Monday theme last week. Im definitely keen to give it a try, the sauce is calling my name!
this vegetarian version is fabulous with the variety of vegetables you used. my pet peeve with vegetarian versions of meat dishes is that the go to vegetable is often eggplant which i HATE – this version is my kind to try!
