Have you ever followed a recipe to the T and it turned out tasting like crap? Well I decided to recreate a recipe I made back in November with my own special touches! It was a perfect dish for this sudden change in temperature (again) here in Chicago! The original recipe that inspired this dish can be found here. I still used the main elements of the recipe, but I wanted to add hearty ingredients like chicken, mushrooms, and wild rice to elevate it from appetizer to entrée with a better depth of flavor.
Ingredients
- 1 large Vidalia Onion (Diced)
- 1 8oz. pkg. Mushrooms (Washed and Diced)
- 2 cups Wild Rice
- 8 oz. Thin-Sliced Chicken Breast (Diced)
- 2 cups Shredded Cheese* (any flavor)
- 8 cups Water
- 1 cup Heavy Cream
- 3/4 cup Cornstarch*
- 1 tsp. Salt
- 1 tsp. Pepper
- 1 tsp. Cayenne Pepper
- 1 tsp. Poultry Seasoning
Instructions
- In a large pot, bring 8 cups of water to a rolling boil. Next, add the Bouillon Cubes and stir until completely dissolved before adding the Diced Onions, Mushrooms, Salt and Pepper. Bring pot back to a boil, stir, then turn stove down to a simmer for 45 minutes, stirring occasionally.
- In a separate pan, season the Diced Chicken with the Cayenne Pepper and Poultry Seasoning.
- Cook on medium-high heat, until they are fully cooked. Set aside for later.
- After 45 minutes. Stir in the Cornstarch Slurry. Simmer for an additional 30 minutes so the soup can thicken.
- After 30 minutes, stir in the heavy cream, the chicken and 2 cups shredded cheese (the finely shredded cheese works best).
- Cook for 10 more minutes. Garnish and Serve.
