I had a few left over ingredients from my Cauliflower and Broccoli Gratin, so I decided to incorporate them with my homemade Garlic Mashed Potatoes. The heavy cream and butter provided a richness to the dish to balance out the garlicky flavor in the potatoes. Of course you can never go wrong with something made from scratch. With 5 simple ingredients, you are all set to make this a weekly side dish that your family will love. In the words of Ina Garten, How easy is that?
Ingredients
- 6 Russet Potatoes
- 1 cup Heavy Cream
- 1/4 stick Unsalted Butter (softened)
- 2 cloves garlic
- 1 tbsp each Salt and Pepper
Instructions
- Wash and Peel the potatoes prior to boiling. For faster cooking, dice them as well. Cook for about 30 minutes or until fork tender. Remove and drain (DO NOT RINSE). Set aside in a large bowl
- Peel and finely chop the garlic cloves. Sauté in a tsp. of Olive Oil for about 5-6 minutes and add to the potatoes. Add the heavy cream, butter, salt and pepper.
- Mash the potatoes to desired consistency adding more Heavy Cream if needed. Garnish and Serve.
