Hope everyone had a wonderful Cinco De Mayo! Unfortunately, I had to work so there were no margaritas for me (womp womp), but I did make a wonderful dessert that definitely can be enjoyed not just on Cinco De Mayo, but all 365 days of the year! My Churro Cheesecake Bars have a nice, cinnamon cheesecake filling, packed between a flavorful, churro like pastry, and boy was it a fiesta in my mouth! Making it was an absolute breeze, and required only 6 simple ingredients.
Ingredients
- 2 pkgs Pillsbury Crescent Dough Sheets
- 2 8 oz. pkgs Cream Cheese (Softened)
- 1 Egg
- 2 tsp Vanilla
- 1 cup Sugar (Divided)
- 3 Tbsp Ground Cinnamon
Instructions
- Preheat Oven to 350 degrees and oil a 9x13 baking dish
- In a small dish, combine 1/2 cup sugar and 2 tbsp. cinnamon and set aside
- In a large mixing bowl, beat softened cream cheese until smooth. Add in the egg, other 1/2 cup of sugar and 2 tsp vanilla. Beat until smooth.
- Sprinkle half the cinnamon sugar blend in the bottom of the baking dish.
- Roll out one of the crescent dough sheets flat over the bottom of the baking dish, covering the cinnamon sugar mix.
- Pour and spread the cream cheese mixture over the dough. Sprinkle the remaining 1 tbsp. of cinnamon over the mixture before covering with the other dough sheet.
- Sprinkle remaining cinnamon sugar blend on top of dough. Bake for 30 minutes until edges are golden brown. Let cool and serve.
- Note: For a crispier topping, spread melted butter on top of dough before adding cinnamon sugar blend.
