Are you tired of spending large amounts of money on Chinese takeout just to be disappointed and hungry later? Do you look at the menu and say “I could make this at home”? Well today is your lucky day! My Loaded Lo Mein will provide you with a weeknight dinner and lunch for at least 2 days. It contains plenty of meat and vegetables so there won’t be any rummaging through the fridge later! It will be the best Chinese Fake-Out you’ve had in a while!
Ingredients
- 8 ounces lo mein noodles
- 2 cups broccoli florets
- 2 Tbsp olive oil
- 8 ounce flank steak (sliced)
- 4 oz. chicken breast (sliced)
- 3 garlic cloves (minced)
- 1/2 lb. shrimp (raw and deveined)
- 1 small package of carrots (shredded)
- 1 red pepper (diced)
- 1/4 cup Sugar snap peas
- 1/4 cup of scallions (green onions)
- ¼ cup packed brown sugar
- ¼ cup soy sauce
- 2 Tbsp hoisin sauce
- ¼ tsp ground ginger
Instructions
- Bring a large pot of water to a boil and cook the noodles according to package directions.
- Add the broccoli the last 5 minutes of cooking and let them cook until tender. Drain.
- While the pasta is cooking, add olive oil to a medium sized skillet.
- Cook the steak and the chicken until no longer pink. Next, add the shrimp and cook until opaque. Finally, add the garlic and carrots. Cook for a minute more.
- In a small bowl whisk together the brown sugar, soy sauce, hoisin sauce, ginger, red pepper and pepper.
- Add the noodles and broccoli to the skillet and pour the sauce on top. Toss until incorporated and garnish with scallions. Serve.
