A simple, healthy 4-Ingredient Chicken Salad was just the thing I needed after a busy food-related weekend in Chicago! It is so easy to make, and it tastes great! I saved time by using a rotisserie chicken from the store to add more flavor to the recipe. If you want to make it even healthier, substitute Greek Yogurt for the Mayonnaise.
Ingredients

- 2 lbs Cooked Rotisserie Chicken (Diced)
- 1 1/2 cups Red Seedless Grapes (Halved)
- 1 cup Celery (Diced)
- 1 cup Pecans (Chopped)
- Dressings and Seasonings
- 1 1/4 cup Mayonnaise
- 2 tbsp Dijon Mustard
- 1 tbsp Fresh Rosemary
- 2 tsp Salt
- 1 tsp Black Pepper
Instructions
- Combine all Ingredients in a large bowl, and stir until everything is just coated, and still has texture. Either serve immediately or cover and set in fridge for 30 minutes to cool and allow flavors to meld together.
